Growing Organic Vegetables – Broad Beans

We were encouraged at Ballymaloe Cookery School to grow vegetables during our 12 week stay. This little broad bean plant went into the ground on the 11th May 2011 in raised beds close to the kitchens.

Every Wednesday morning at Ballymaloe, I attended the organic farming classes with Susan Turner. Susan trained at Stellenbosch University

and spent time at Kew Gardens before converting Kinoith Farm, where Ballymaloe Cookery School is located, into a certified

organic farm, all 100 acres of it.

Broad beans close to harvest. One of my favourite dishes which I prepared in Mrs.Walsh’s Cottage on several occasions was Risotto with broad beans, fresh peas, green asparagus and sugar snaps.
